I made waffles again! Since my waffle experiment last week I’ve been craving them, so it finally came time to make some more. I threw these together yesterday after my long sleep in and then went outside to read in the sun.

Vegan Bibimbap with Crispy Sesame Tofu
Can’t get enough of this vegan bibimbap! So yummy!!
Blueberry Porridge

Serving Size: 1 cup
Calories (full recipe): 443
Calories (one serving): 221
Ingredients:
- 6 tablespoons oats
- 1 ½ cups water
- ½ cup low-fat greek yogurt (blueberry or plain)
- ½ cup frozen blueberries
- 1 tablespoon honey
Steps:
- Add the oats and water to a medium saucepan. Cook for 2 minutes or until the mixture is thick but there is still moisture. Stir occasionally.
- Microwave the blueberries until they are warm all the way through (about 1 minute). Add 1 tablespoon honey and stir.
- Mix the yogurt and the oats in the pan. Scoop into two bowls and top with the blueberry sauce.

The perfect packed lunch:
A delicious raw salad, filled with tomatoes, chickpeas, rocket, olives, cucumbers and hummus. Above is Kale and noodles and onion.
