Oatmeal Banana Cookies

Ingredients:

  • 2 cups oats
  • 3 ripe bananas
  • 1/3 cup applesauce
  • ½ cup skim milk or almond milk
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • ½ teaspoon baking powder
  • A pinch salt

Steps:

  1. Preheat the oven to 350˚F (165˚C)
  2. Mash the bananas in a medium bowl.
  3. Add everything else except for the baking powder and stir well, then stir in the baking powder.
  4. Line a cookie sheet with wax paper or a baking mat. Scoop a little less than ¼ cup of cookie batter on, then flatten into the shape of a cookie. Bake for 15 minutes. You should have 12 cookies.
  5. After 15 minutes, flip the cookies with a spatula and brown the other side for 2-3 minutes.
  6. Let the cookies cool on a baking rack for 5 minutes before enjoying.
