The weekend is so close I can almost taste it! Since I work every second weekend I appreciate and look forward to my weekends off even more. I only have seven hours of work to get through first. Not only am I looking forward to sleeping in and going to the market (my last visit for 6 weeks), but I can finally wear my brand new brown boots that I ordered over a month ago. I am going to look so damn cute in my new boots and jeans. All I need to make the day perfect is some sunshine.
P.S. definitely not eating pancakes this morning. I’ll be eating breakfast at work today which be consist of granola breakfast bars, coconut yoghurt and berries.

Baked Apples

Serving Size: ½ apple

Calories (full recipe): 124

Calories (one serving): 62

Ingredients:

  • 1 large apple
  • 1 tablespoon maple syrup
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg

Steps:

  1. Preheat your oven to 400 ˚F (200 ˚C)
  2. Wash and peel the apple.
  3. Cut the apple in half and carefully remove the core. Place the apple halves flat side down in a brownie pan.
  4. Mix the syrup, cinnamon, and nutmeg together, and spoon over the apples.
  5. Bake the apples for 30 minutes, then enjoy with whipped cream.
