Sadly, I won’t be spending much time in the kitchen this weekend. But I certainly always look forward to making my next treat.
If you fancy pancakes this weekend, here’s my recipe which is great served with coconut yogurt, pomegranate and maple syrup:
🥞 Pancakes (serves 2):
1 1/3 cups self raising flour
4 tablespoons sugar
2 teaspoons baking powder
1 ¼ cups plant milk
1 teaspoon vanilla extract
Combine all ingredients and whisk well. More or less milk may be required. To achieve a very fluffy pancake ensure the mixture is very thick, I let it sit for a couple of minutes after whisking and it turns quite thick but aerated and is only just pourable. Cook ¼ cups of mixture on medium heat until golden on each side.
