What’s for Breakfast – Egg White and Veggie Scramble (104 cal)

4 Egg Whites (68 cal)

4 grape tomatoes (12 cal)

3 red pepper ribs (8 cal)

2 small mushrooms (8 cal)

1 clove garlic (4 cal)

2 tbsp water (0 cal)

spray non-stick cooking spray (0 cal)

seasonings to taste (I use salt, pepper, garlic powder, and paprika – about 4 cal)

Separate your egg whites from the yolks into a small bowl.  Whisk lightly with salt and pepper.  Chop your veggies into bite size pieces, mince your garlic, and set aside.  Heat a small, non-stick skillet over medium heat.  Spray with a calorie free cooking spray (I use Pam) and pour in your egg whites.  Cook until solid; dish onto a plate and set aside.  Briefly rinse your pan and spatula, or just use a fresh one.. Spray again and add the veggies and garlic.  Add your seasonings (anything else you like can be substituted).  Sauté for a minute or two, then add one or two tablespoons of water and cover.  Cook for another minute or two until your veggies are soft.  Spoon over your egg whites.  Eat guilt free ❤
